This is a "classic" Lintong coffee from the Lake Toba region which defines the landscape of the area. This is the largest volcanic crater lake in the world, and the result of the largest volcanic event on earth in the last 25 million years!
This coffee showcases the unparalleled sweetness and complexity of flavors we consider kindred to the Pacific Northwest: herbal notes like Ricola, pipe tobacco, and shiso leaf, with an earth-toned finish that leaves you with a long-lasting aftertaste. The smell conjures a humidor room, as well as notes of Bergamot, and smokey peat. Roasting adds thick slabs of cocoa to the profile, and the long finish yields hints of aromatic cedar.
This Lintong coffee is from Sigumpar Village, in the northern Sumatran sub-district of Humbang Hasunduntan. It comes from a family milling operation in town operated by man named Alexander, who is the younger brother of the coffee collector we used to buy this coffee from (well, coffee from Sigumpar Village at least). Pak Alex has his own small farm nearby that he processes and sells, but also buys wet parchment from neighbors in town as well as in six of the neighboring villages.
