Cleanliness is next to godliness, or so they told us growing up. Nobody took the note more seriously than Kenya.

Most coffee gets washed once and called clean. Kenya pulps it, ferments it overnight, rinses the skins off in clean water, then dunks it a second time in fresh water and lets it soak all over again, like the first pass was just a rough draft. By the time the beans reach the drying beds there's nothing left in the cup but what the fruit put there. That second soak is the whole Kenyan trick, the reason these coffees come out so clean the fruit's got nowhere to hide.

This one comes from Gathaithi, a name doing double duty. It's the washing station, the "factory" in Kenyan shorthand, and it's the Farmers Cooperative Society that runs the place. Around 1,250 members work the hills of Nyeri County and walk their ripe cherry down to this one shared mill, where it all gets processed together before the sun takes over on the raised beds.

The farms sit near 1,700 meters, some higher, some lower, high enough that the cherries hang around and take their time getting sweet. What grows here is the old Kenyan bloodline, SL-28 and SL-34, two varieties a Kenyan lab dreamed up back in the 1930s that have been quietly making legends ever since, with a little disease-tough Ruiru-11 mixed in for insurance.

Then there's the letter. Kenya sizes its coffee before anyone tastes it, running the beans across screens until only the fattest ride on top, and those get stamped AA. It measures the bean, not the cup, so a big dud and a big beauty wear the same badge. Most AA is just big. This one earned it.
The proof pours out bright. Orange-citrus comes on first, sweet and a little candy-wild, then blackcurrant slides in underneath, dark and tart the way only Kenya does it, with plum notes laid across the middle to hold the two ends together. It runs clean off the tongue and leaves the glass about as spotless as it found it.

All that washing, all that rinsing, all that fussing over water. Turns out godliness tastes like fruit.
