Ethiopia invented coffee, and a few thousand years later it invented a way of drinking it that feels less like a beverage and more like a mood settling over a room. This lot comes off the high slopes of Guji, up past two thousand meters where the air runs thin and the cherries take their time. It pours like a fruit stand caught in the last hour of light, blackberry and strawberry hanging heavy, a juicy apricot bending the whole thing warm. Pour it slow. Let it stretch out. It's in no hurry and neither should you be.

Some coffees announce themselves. This one drifts in sideways, warm and a little woozy, sweet in a way that keeps a shadow in it.

It grows high up in Guji, over two thousand meters, where the mountains push the cherries so far into the sky they forget to hurry. Thin air, cold nights, a season that just keeps going. The fruit hangs on the branch and takes its sweet time, and slowness is the whole secret. Nobody rushes the good stuff. You let it linger until the sugar has nowhere left to go.

Down at the station the coffee gets the same patient handling. It ferments a full day, gets washed by hand, then dries slow on raised beds under shade for close to two weeks, turned every few hours so it settles even. What comes off the beds is clean and deep, with a low hum running under the sweetness that you feel more than taste.

Then you drink it. Blackberry and strawberry stacked up ripe and heavy, a juicy apricot bending across the top and refusing to sit still. It's sweet, but there's weather in it, the good kind, the kind that makes you slow down and pay attention to what you're holding.

Coffee started here, in these mountains, long before anyone thought to sell it. Drink this one the way the place seems to ask you to. Unhurried. A little dreamy. Like the last warm hour before the light goes.
