Pedregal, the heart of this coffee community, is a place where farmers bring their harvests down the mountain each week, where the air is crisp, and where cell service bows out so presence can take its place. Here, coffee is not just a crop; it’s a lineage, a legacy held by producers who have defied the push toward hybrids, keeping their Caturra, Bourbon, and Typica trees thriving at altitudes up to 2,200 masl.
Processing is meticulous—hand-picked ripe cherries, careful fermentation, and drying on raised beds under protective cover. Every lot is cupped within days of drying, tucked into grainpro until it’s ready for its next step, ensuring pristine preservation from farm to cup.
Since 2015, these farmers have navigated the challenges of remoteness to help bring their coffees to a market that values their work. Now, they have options. They have power. And they have coffee that speaks—of resistance, of resilience, of a land unlike any other.
